1 package active dry yeast
3/4 cup water

2 lbs yellow onions , peeled , and very thinly sliced to yield 8 cups ( about 5 )
1/4 cup olive oil
1 tablespoon butter
3 garlic cloves , peeled and minced
1 teaspoon kosher salt
1/3 cup water
1 sprig fresh thyme ( or 1/4 teaspoon dried )
1/4 cup freshly grated parmesan cheese
2 dozen flat anchovy fillets , oil drained , about
3 dozen oil-cured black olives , pitted
1/2 teaspoon fresh ground pepper

Instructions

1.In a large bowl, dissolve yeast in warm water and sugar. Stir in olive oil. Add flour and salt, mixing until a dough forms.
2.Turn dough out onto a floured surface and knead until smooth. Place dough in an oiled bowl, cover with a kitchen towel, and allow to rise until doubled in size.
3.In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and cook until fragrant. Add sliced onions and salt, stirring to coat. Cook over low heat, stirring occasionally, until onions are very soft and caramelized, about 45 minutes.
4.Stir in water and thyme. Cook for an additional 10 minutes, until mixture is thick and jam-like.
5.Preheat oven to 400°F. Roll out dough on a floured surface to a thickness of about 1/4 inch. Transfer to a baking sheet lined with parchment paper. Spread onion mixture over dough, leaving a 1-inch border around the edge. Sprinkle with parmesan cheese and arrange anchovies and olives on top. Season with freshly ground pepper.
6.Bake for 20-25 minutes, until crust is golden brown. Serve hot or at room temperature.
