Ingredients

2 plantains , ripe
2 tablespoons vegetable oil
3 tablespoons olive oil
1 lb ground sirloin
3/4 cup scallion , chopped
1/2 green pepper , chopped
1 tablespoon garlic , chopped
1/4 lb chorizo sausage , diced ( or hot Italian sausage )
2 tablespoons cornstarch
3 tomatoes , peeled & chopped
3 eggs , beaten
salt & pepper

Instructions

1.Preheat oven to 350°F.
2.Peel and cut plantains in half lengthwise. In a pan, heat vegetable oil and olive oil. Fry plantains until golden brown. Repeat with the rest of the plantains.
3.To the same pan, add the ground sirloin and cook until brown. Add scallion, green pepper, garlic, and chorizo sausage. Cook until vegetables are tender and meat is cooked through.
4.Mix cornstarch with 2 tablespoons of water and stir into the meat mixture. Add tomatoes and let cook for 10 minutes.
5.Take an oven-safe glass dish and place the fried plantains around the sides. Pour the meat mixture inside. Cover with beaten eggs. Place in oven for 25 minutes.
6.Let cool, slice, and serve.
