1 can enchilada sauce or ( 28 ounce ) can pasta sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons chopped cilantro
1 1/2 lbs ground beef
1 medium onion , finely diced
2 cans diced green chilies
1/2 teaspoon salt
10 -14 corn tortillas
1/2 cup canola oil
3 cups grated sharp cheddar cheese
1/2 cup chopped black olives
1 cup chopped green onion
1/2 cup chopped cilantro

Instructions

8.Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes uncovered, or until the cheese is melted and bubbly.
9.Let the enchiladas cool for a few minutes, then sprinkle with green onions and cilantro. Serve hot and enjoy!
