Chicken Parmigiana, also known as Chicken Parmesan, is a classic Italian-American dish made with breaded and fried chicken cutlets, tomato sauce, and melted cheese. The dish originated in the southern Italian region of Campania and was brought to the United States by Italian immigrants in the early 20th century. The dish has since become a staple in Italian-American cuisine and is popular in restaurants and home kitchens across the country. The Pioneer Woman's recipe is a simplified version of the classic dish, using pan-fried chicken instead of fried and adding white wine and fresh parsley to the tomato sauce for added flavor.

Instructions

.Preheat the oven to 350 degrees F.
.Season the chicken breasts with salt and pepper and dredge in flour.
.In a large skillet, heat the olive oil over medium-high heat.
.Add the chicken and brown on both sides, then remove from skillet and set aside.
.Reduce heat to medium and add butter.
.When the butter is melted, add the onion and garlic and sauté until soft.
.Increase heat to medium-high and pour in the wine, scraping the bottom of the skillet to deglaze and cook for 1-2 minutes.
.Add the crushed tomatoes, sugar, and chopped parsley and simmer for 10 minutes.
.Arrange the chicken in a 9×13-inch baking dish and pour the tomato sauce over the chicken.
.Sprinkle grated Parmesan cheese over the top of each chicken breast.
.Bake for 30 minutes or until the chicken is cooked through and the cheese is lightly golden brown.
