Ingredients

10 garlic cloves , roasted
1/2 ounce fresh ginger , peeled diced ( optional )

1 tablespoon salt
1 teaspoon ground cumin
1 1 bunch basil ( a mix of all three is yummy ) or 1 bunch parsley ( a mix of all three is yummy )
7 lbs roasted tomatillos
1 tablespoon brown sugar ( optional )

Instructions

1.Preheat your oven to 400°F.
2.Prepare the vegetables by peeling and slicing the onion, slicing the pineapple, deseeding and slicing the bell peppers, peeling garlic and ginger, and deseeding the ghost pepper. Place all of them on a baking sheet.
3.Drizzle all of the vegetables with some oil and salt to taste. Place the baking sheet in the oven and roast for 20 minutes or until the vegetables are lightly browned.
4.Remove the baking sheet from the oven and allow the vegetables to cool.
5.In a blender, combine the roasted vegetables, the roasted tomatillos, lime zest and juice, lemon juice, white vinegar, cumin, and basil or parsley. Blend until mixture is smooth.
6.Serve with your favorite food or store in an airtight container for future use.
