1 tablespoon unflavored gelatin , soaked in 2 1/2 tbsp . cold water
1 cup heavy cream , whipped
pineapple slice , for garnish
maraschino cherry , for garnish

7.Cook the mixture over low heat until thickened, making sure to continuously stir to prevent burning (about 10-15 minutes).
8.Remove the pineapple mixture from heat and add the soaked unflavored gelatin.
9.Allow the pineapple mixture to cool for 5-10 minutes.
10.In a separate bowl, beat the egg whites until stiff.
11.Fold the whipped egg whites into the cooled pineapple mixture.
12.Fold in the whipped heavy cream until well combined.
13.Pour the mixture into a serving dish and let it chill in the refrigerator for at least 3 hours or until set.
14.Serve chilled decorated with pineapple slices and maraschino cherries, if desired.
