Ingredients

6 chicken breasts ( fresh or frozen )
1 can crushed pineapple , drained
2 cans black beans , rinsed and drained
2 cups salsa , medium ( needs to be medium or it will be too bland )
3 cups cooked rice
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
16 flour tortillas , burrito-sized ( I use 8-inch )
2 cans green enchilada sauce
2 cups cheddar cheese , shredded ( okay to sub monterey jack , or even a Mexican blend )
Pineapple chicken burritos are a hearty and satisfying Mexican dish that is perfect for dinner or lunch. The sweet and tangy flavor of the pineapple perfectly complements the savory chicken and bean filling, making this dish a crowd-pleaser. This recipe yields 16 burritos, making it great for feeding a larger group or meal prepping for the week. Serve with a side of guacamole and sour cream for a complete and delicious meal.

Instructions

1.Preheat oven to 350 degrees F.
2.Place chicken breasts in a baking dish and season with cumin, garlic salt and onion salt.
3.Bake chicken for 25 to 30 minutes or until cooked through. Let cool, then shred with a fork.
4.In a large bowl, mix together cooked rice, black beans, and drained crushed pineapple.
5.Add 2 cups of salsa to rice mixture along with shredded chicken, and mix well.
6.6.Wrap tortillas in damp paper towels and heat in the microwave for 30 seconds.
7.Spread 1/4 cup of enchilada sauce in the bottom of 9x13 inch baking dish.
8.Place approximately 1/2 cup of chicken/rice mixture into each tortilla and roll up tightly, placing seam side down into prepared dish.
9.Pour remaining enchilada sauce over tortillas and sprinkle with shredded cheese.
10.Bake for 25 to 30 minutes or until cheese is melted and bubbly.
