Ingredients

2 tablespoons chopped onions
4 large garlic cloves , chopped
1 tablespoon spanish sweet smoked paprika
1/2 teaspoon spanish hot smoked paprika or 1/4 teaspoon cayenne
coarse salt ( kosher or sea )
1 teaspoon dried oregano
1 teaspoon black peppercorns
2 teaspoons dried thyme
1 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1 bay leaf , crumbled
2 tablespoons white wine vinegar ( good quality )
2 tablespoons dry white wine ( optional )
3 tablespoons olive oil , plus more for brushing the kebabs
1 1/2 1 1/2 lbs chicken breasts or 1 1/2 lbs prawns
Pinchos or Spanish kebabs are a popular tapa or appetizer in Spain, often enjoyed with a glass of cold beer or wine. Traditionally, they are made with pork or lamb, but this recipe uses chicken or prawns to make a lighter and healthier version. Instructions

1.Soak eight bamboo skewers in water for at least 30 minutes.
2.In a food processor, pulse the onions, garlic, sweet paprika, hot paprika, salt, oregano, peppercorns, thyme, cumin, cinnamon, bay leaf, vinegar, wine, and 3 tablespoons of olive oil together until smooth.
3.Thread chicken or prawns onto the skewers, brush with olive oil, and season with salt and pepper.
4.Heat a grill or grill pan over medium-high heat and grill the kebabs for 8-10 minutes, turning occasionally until fully cooked.
5.Remove kebabs from grill and let them rest for a few minutes before serving.
