4 cups vinegar , divided ( coconut vinegar , sukang tuba , organic and raw )
1 cup bird 's eye chile , divided ( whole siling labuyo )
1/4 cup ginger , julienned , divided
8 garlic cloves , minced , divided
1 cup fish sauce ( patis , any brand )
1 tablespoon sugar
1/4 cup red onion , sliced
Pinakurat Copycat (Spiced Coconut Vinegar) is a popular Filipino condiment made with coconut vinegar, bird's eye chile, ginger, garlic, fish sauce, sugar, and red onion. Instructions

1.In a large sterilized jar, combine half of the vinegar, half of the chiles, half of the ginger, and half of the garlic.
2.Using a wooden spoon or muddler, gently press and crush the ingredients to release their flavors.
3.Add the remaining vinegar, chiles, ginger, garlic, fish sauce, sugar, and red onion to the jar and stir well to combine.
4.Seal the jar tightly and let it sit in a cool, dark place for at least 2 weeks to allow the flavors to meld.
5.After 2 weeks, strain the vinegar mixture through a fine-mesh sieve or cheesecloth into a clean, sterilized jar or bottle.
6.Store the spiced coconut vinegar in a cool, dark place for up to a year.
