Ingredients

1 lb Japanese eggplant , cut into 2 inch sections
salt
5 ounces long beans , trimmed , cut into 3 inch lenghts
5 pieces fresh ginger , quarter sized
3 garlic cloves
1 medium onion , chopped
4 teaspoons Japanese soy sauce
1 1/2 lbs red squash
10 whole okra , trimmed
Pinakbet is a popular Filipino vegetable dish that originated in the northern provinces of the Philippines. Instructions

1.Heat oil in a pan over medium heat.
2.Saute garlic until golden brown. Add onions and ginger. Cook until onions become translucent.
3.Add tomatoes and cook until soft.
4.Add pork belly and cook until golden brown.
5.Pour in water and let it simmer for 10 minutes. Add in soy sauce and simmer for another 5 minutes.
6.Arrange the squash at the bottom of the pot.Add in the okra and long beans on top of it.Cover the pan and let it simmer for 5 minutes,until the vegetables are slightly tender.Add the sliced eggplant and cook for another 10 minutes.
7.Adjust seasoning as needed. Serve hot with rice.
