1/4 pound fresh green beans , trimmed
1/4 pound eggplant , cut into bite-size pieces
1 small bitter melon , cut into bite-size pieces
Pinakbet is a popular Filipino vegetable dish that originated in the Ilocos region of the country. Instructions

1.In a large pan or wok, heat the olive oil over medium-high heat.
2.Add the chopped onion and minced garlic, and sauté for 1-2 minutes until fragrant.
3.Add the chopped pork loin and cook until browned, about 5-7 minutes.
4.Add the peeled and deveined prawns, salt, and pepper, and cook for another 3-5 minutes until the prawns turn pink.
5.Add the chopped tomato, zucchini, fresh okra, fresh green beans, eggplant, and bitter melon, and mix everything together well.
6.Cover the pan or wok and let the vegetables steam for about 10-15 minutes, stirring occasionally, until they are tender and fully cooked. Serve hot with rice.
