Ingredients

1 cup white sugar
8 beaten eggs
1 can sweetened condensed milk
5 tablespoons pineapple juice
1 tablespoon shaved coconut ( toasted if desired ) ( optional )

Instructions

1.In a medium saucepan, cook white sugar over medium heat until it melts and turns a caramel color.
2.Pour the caramel into 8 inch round baking dish, tilting the dish to coat the bottom evenly and letting the excess caramel coat the sides.
3.In a large mixing bowl, beat the eggs, then add sweetened condensed milk, pineapple juice and shaved coconut. Mix until everything is completely combined.
4.Pour the mixture over the caramel-coated baking dish.
5.Preheat the oven to 350 degrees F (175 degrees C). Fill a larger pan with 1 inch of water and place the flan dish into the water.
6.Bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.
7.Once done, take out from the oven and let it cool at room temperature. Once cooled, cover with a clean dish towel and refrigerate for at least 4 hours or overnight.
8.Once ready to serve, run a knife carefully around the edges of the dish. Place a serving plate on top of the flan dish and carefully flip over, letting the flan come out on the plate. The caramel sauce will flow on to the serving plate.
