Ingredients

1 lb shrimp ( deveined and shelled ) or 1 lb prawns , minced very fine ( deveined and shelled )
1 tablespoon ginger juice
1 teaspoon sherry wine
1 teaspoon salt
1 egg white , unbeaten
1/4 teaspoon msg
1 teaspoon cornstarch
1 tablespoon sesame oil
1/4 cup fat , from ham ( optional ) or 1/4 cup pork ( optional )
3/4 cup sesame seeds , toasted
8 slices sandwich bread
oil ( for deep frying )

Instructions

1.In a large mixing bowl, combine minced shrimp, ginger juice, sherry wine, salt, egg white, msg, and cornstarch.
2.Mix well until it forms a paste.
3.In a skillet, heat sesame oil and fat from ham/pork over medium heat.
4.Cook the paste for about 5 minutes until it turns light brown. Cool it down to room temperature.
5.Spread some sesame seeds on a plate.
6.Take a slice of bread and remove its crust. Cut it into 4 equal squares.
7.Dab the top of each slice with the shrimp paste until it forms a ball shape.
8.Dip the ball-shaped paste into sesame seeds and lightly press on it to make sure that the balls are fully coated in sesame seeds.
9.Heat the oil in a wok or a deep skillet and fry the shrimp balls until golden brown.
10.Drain the excess oil by putting the balls on a plate lined with paper towel. Serve hot with some sweet chili sauce if desired.
