Ingredients

2 slices bacon , diced
1 rabbit , cut into 4 serving pieces
3 carrots
1 large onion

salt , to taste
1/2 cup water
ground pepper
1 cup medium grain rice , rinsed and drained
2 cups boiling water

Instructions

7.Add 2 cups of boiling water and bring to a boil.
8.Reduce heat to low, cover the pot, and let simmer for 20 minutes.
9.Stir the rice, then return the rabbit pieces to the pot, placing them on top of the rice.
10.Cover again and let simmer for an additional 10-15 minutes, or until the rabbit is fully cooked. Serve hot!
