Ingredients

4 large firm tomatoes
1/2 cup coarsely chopped fresh mushrooms
1/3 cup cracked bulgur wheat
1/3 cup celery , chopped
2 tablespoons butter or 2 tablespoons margarine
1 tablespoon olive oil
1 3/4 cups water , divided
1/3 cup uncooked long-grain rice
1 1/2 teaspoons instant chicken bouillon granules
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1 bay leaf
1/3 cup green onion , chopped
2 teaspoons parmesan cheese , grated
1 teaspoon fine dry unseasoned breadcrumbs
Pilaf-Stuffed Tomatoes are a delicious and healthy meal that can satisfy any appetite. Instructions

1.Preheat the oven to 375°F (190°C).
2.Cut off the top of the tomatoes and scoop out the pulp.
3.Save the pulp for later.
4.In a frying pan, melt the butter or margarine with the olive oil over medium heat. Add the celery, mushrooms, and bulgur and cook until the vegetables are tender.
5.Add 1 1/4 cups of water, rice, chicken bouillon granules, salt, thyme, and bay leaf to the pan. Stir to combine and bring to a boil.
6.Reduce the heat to low and cover the pan. Cook for 15 minutes, stirring occasionally.
7.Remove the bay leaf and add in the green onions, grated Parmesan cheese, breadcrumbs, and the reserved tomato pulp. Mix gently.
8.Stuff each tomato with the mixture and place them in a greased baking dish.
9.Pour 1/2 cup of water into the dish and cover the dish with foil.
10.Bake for 40-45 minutes until the tomatoes are cooked through. Serve warm.
