Ingredients

125 g self-raising flour
25 g unsalted butter
1 large egg
125 ml low-fat milk
15 g caster sugar

350 g mixed berries , dried and hulled ( blackberries , raspberries , strawberries , blueberries , washed )
25 g demerara sugar
300 ml double cream , low-fat is fine , to serve

Instructions

1.In a large mixing bowl, sift the flour and caster sugar.

4.Slowly add the wet ingredients to the dry mixture and whisk until you get a smooth batter.

6.In a separate pan, add orange juice, arrowroot and demerara sugar and cook for 1-2 minutes until the mixture thickens.
7.Add mixed berries to the pan and cook for another minute until the berries warm up and the mixture thickens.
8.Serve the pikelets topped with the berry mixture and a dollop of double cream.
