Instructions

1.In a large bowl, whisk together the self-rising flour, sugar, and baking soda.
2.In a separate bowl, combine the lightly beaten egg, milk, and melted butter.
3.Add the wet ingredients to the dry ingredients and stir until just combined.
4.Heat a non-stick skillet over medium heat.
5.Spoon about 1 tablespoon of batter per pikelet onto the skillet.
6.Cook for 1-2 minutes or until the surface of the pikelet is covered in bubbles. Flip and cook for another minute or until golden brown on the other side.
7.Repeat until all the batter is used up.
