Pigs in the Blanket Aka Stuffed Cabbage is a classic comfort food that originated in Romania and spread to Eastern Europe and the Middle East. It is a hearty dish made of lean ground beef, pork sausage, cooked rice, and cabbage leaves that are steamed and then baked in a delicious tomato broth. This dish is a perfect one-pan meal that is easy to prepare and can be customized with different types of meat, spices, and veggies. Depending on your dietary needs, you can make it gluten-free, keto-friendly, or vegan by using meat alternatives or grains like quinoa or buckwheat. It is a tasty and satisfying meal that is perfect for a family dinner or a potluck party.

Instructions

1.Preheat oven to 375°F.
2.Remove the core from the head of cabbage and boil or steam the leaves until pliable. Once cool, use a sharp knife to cut the large center vein of each leaf to make it easier to roll.
3.In a large bowl, mix the ground beef, pork sausage, garlic salt, sweet paprika, black pepper and cooled rice together until well combined.
4.Divide the meat mixture into 24 portions. Place each portion on a cabbage leaf and roll the leaf up tightly just like a burrito. Cut off any excess cabbage.
5.Pour the canned tomatoes with juice in a large saucepan. Add chicken broth and stir to combine. Place the stuffed rolled cabbage in the saucepan. Lightly drizzle with olive oil. Season with salt and black pepper.
6.Cover the pan with aluminum foil and place it in the oven. Let it cook for two and a half hours, checking occasionally to see if the liquid has reduced too much.
7.Once the cabbage rolls are cooked through, remove the foil and let them cook for another 10-15 minutes. This will allow the top of the cabbage rolls to gently brown. Once done, serve them hot as a standalone dish or with a side salad or vegetables.
