Ingredients

2 tablespoons olive oil
1 1/2 cups basmati rice
2 onions , finely chopped
1/2 red bell pepper , finely chopped
1/2 yellow bell pepper , finely chopped
1/2 green bell pepper , finely chopped
2 garlic cloves , minced
1/4 teaspoon red chili pepper flakes ( crushed )
1 teaspoon cumin , freshly ground
1 can roma tomatoes , with juice ( crushed )
2 -3 saffron strands
2 cups chicken stock
Pierre's Spanish Rice is a traditional dish from the Spanish cuisine, also popular in Latin American and Caribbean cultures. As its name suggests, this aromatic and flavorful dish features Spanish ingredients like saffron and cumin, along with bell peppers and garlic. This dish is sometimes called 'red rice' due to the reddish tint that it gets from the tomatoes and saffron. It can be served alongside meat, fish, beans, or used as a filling for stuffed vegetables or burritos.

Instructions

1.Rinse the rice in cold water and soak for 10 minutes.
2.Heat the olive oil in a large pot over medium heat.
3.Add the onions, bell peppers, garlic, and red chili pepper flakes. Cook until onions are translucent.
4.Add the cumin and saffron, and cook for 1 minute.
5.Add the canned tomatoes and chicken stock to the pot, and bring to a boil.
6.Drain the rice and add it to the pot. Stir well.
7.Cover the pot and reduce heat to low. Let it simmer for 20-25 minutes, or until rice is tender and liquid is absorbed.
8.Fluff the rice with a fork.
