1 egg yolk
1/2 teaspoon salt
1 egg
3 1/4 cups flour
1/2 teaspoon salt
1/2 cup water
1 1/2 tablespoons butter , melted

Instructions

1.In a bowl, mix together the ground farmer cheese, egg yolk, and salt.
2.In another bowl, beat the egg and flour together until well combined.
3.Gradually add water and melted butter to the egg and flour mixture, stirring until a dough forms.
4.On a floured surface, roll the dough out to 1/8 inch thickness.
5.Use a 2-inch round cookie cutter to cut out circles of dough.
6.Place a teaspoon of the cheese mixture in the center of each dough circle.
7.Pinch the edges of the dough together to form a pierogi.
8.Bring a large pot of salted water to a boil and cook the pierogi until they float to the surface, about 3-5 minutes.
9.Drain and serve with sour cream or melted butter and caramelized onions, if desired.
