2 lbs polish fresh cheese made from milk and buttermilk ( twarog )
1/2 cup all-purpose flour , plus more for dusting
salt
2 ounces butter
1/2 cup plain breadcrumbs
sour cream , for serving

Instructions

1.Beat egg yolks in a large bowl until light and fluffy.
2.Add the cheese, half cup of flour and a pinch of salt. Stir until all ingredients are well combined.
3.Beat egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.
4.Place a large pot of salted water to boil.
5.Dust a work surface with flour. Take a piece of the dough and shape it into a long thin roll. Cut it into small pieces of about 1 inch long.
6.Boil the pierogi leniwe in the boiling water until they rise to the surface. Remove them with a slotted spoon and drain them on a paper towel.
7.In a large pan or skillet, melt the butter over medium heat. Add the cooked pierogi leniwe to the pan and saute until lightly browned, stirring occasionally.
8.Serve with plain breadcrumbs, a dollop of sour cream and a sprinkle of granulated sugar.
