Ingredients

1/8 cup canning salt
2 cups mexican sour gherkins , cucamelon or 2 cups mouse melon , blossom end removed
1/2 cup water
1 cup apple cider vinegar
1/4 teaspoon mustard seeds
1/4 teaspoon coriander seed
1/4 teaspoon cumin seed
1/4 teaspoon negilla seeds
1/4 teaspoon epazote
1 tablespoon honey
1/8 cup chopped cilantro
2 chili peppers , scored
2 raspberry leaves ( or oak leaves )

Instructions

1.In a large bowl, combine mexican sour gherkins, water and canning salt. Let sit for 3 hours.
2.After 3 hours, rinse the gherkins and transfer them to a jar with raspberry or oak leaves at the bottom.
3.In a separate pot, combine apple cider vinegar, honey, mustard seeds, coriander seeds, cumin seeds, negilla seeds, epazote, and chili peppers. Bring mixture to a boil.
4.Pour the hot mixture over the gherkins and leave for a few minutes to cool.
5.Add chopped cilantro to the jar and close it tightly. Leave it in the fridge for at least a day before serving. Enjoy as a snack or side dish!
