Ingredients

700 ml malt vinegar
2 tablespoons coriander seeds
500 g cauliflower , broken into 3cm florets
2 onions , peeled and chopped
3 tablespoons English mustard powder
3 tablespoons plain flour
1 tablespoon turmeric
2 teaspoons ground ginger
150 ml cider vinegar
100 g French beans , trimmed and cut into 1cm slices
1/2 cucumber , quartered lengthways and cut into 1cm slices
2 garlic cloves , peeled and sliced
200 g granulated sugar
Piccalilli is the Indian version of the British pickled cabbage. However, the Indian relish is typically made from an assortment of vegetables, including cauliflower, onions, French beans, and cucumbers. Piccalilli has a tangy flavor that comes from malt vinegar and the sweetness of the sugar. Instructions

1.Combine the malt vinegar and coriander seeds in a large pan and bring to a boil.
2.Add the cauliflower and onions and cook for 2 minutes.
3.In a separate bowl, mix the mustard powder, plain flour, turmeric and ground ginger with the cider vinegar to make a smooth paste.
4.Add the paste to the pan, stirring well.
5.Add the French beans, cucumber, garlic and granulated sugar, and stir until sugar has dissolved.
6.Cook the mixture on medium heat for about 30 minutes and occasionally stir the mixture.
7.When the mixture is thick and syrupy, remove from heat and ladle into sterilized jars.
