1 lb sweet potato , peeled
1 lb squash , peeled
1 lb flour
3 tablespoons fresh yeast
2 cinnamon sticks
4 cloves
2 tablespoons anise seed
3 tablespoons sugar
1 pinch salt
2 eggs , slightly beaten
oil , necessary amount for frying
2 cups dark brown sugar
2 cups white sugar
4 cloves

Picarones is a Peruvian dessert that originated in the 16th century during the Spanish colonial period. It is a sweet treat that is perfect as an afternoon snack or dessert. The sweet potato and squash combination makes it unique, and the blend of spices and sugar gives it a distinct flavor profile. Picarones are traditionally served warm, drizzled with syrup, and accompanied by a hot cup of coffee or tea.

Instructions

1.Boil sweet potato and squash until soft, then mash together in a large bowl.
2.In a separate bowl, dissolve the yeast in warm water, add a pinch of sugar and let it rest for 10 minutes, or until frothy.
3.Meanwhile, in a small pan, toast the spices over low heat until fragrant, about 2 minutes. Remove from heat and let cool.
4.Add the flour, toasted spices, sugar, salt, and beaten eggs to the mashed sweet potato and squash mixture. Mix well until you have a smooth batter.
5.Let the batter rest for 1 hour.
6.In a large pot or deep fryer, heat the oil until it reaches 375°F.
7.Using a small ladle, spoon the batter into the hot oil, cooking 4-5 Picarones at a time.
8.Cook for 2-3 minutes or until golden brown, flipping once.
9.Remove from oil and let drain on paper towels.
10.To make the syrup, combine both sugars, water, spices, and orange peel in a pot, bring to a boil, stirring occasionally.
11.Lower heat and let simmer until syrupy, about 40 minutes.
12.Serve Picarones warm, drizzled with syrup and enjoy!
