2 1/4 lbs white pearl onions , peeled
8 ounces garlic
2 tablespoons dried mint ( leaves only ) or 1/2 lb fresh mint leaves ( leaves only )
white vinegar , to cover
2 -3 tablespoons salt ( amount approximate )

Instructions

1.Peel the white pearl onions and garlic cloves, set aside.
2.In a large mixing bowl, add the onions, garlic cloves, dried/fresh mint (leaves only), and salt. Mix all the ingredients well. 3. Add enough white vinegar to cover the mixture.
3.Mix everything again, taste and adjust seasoning, if required.
4.Pour the mixture into a sterilized jar, settle well and let it cool to room temperature.
5.Seal the jar tightly, place in a cool dark place and let the mixture sit for at least three weeks and up to several months.
6.Shake the jar well every other day to distribute the ingredients in the mixture.
7.When the pickling is complete, transfer to a serving bowl and enjoy!
