Ingredients

2 tablespoons pure olive oil
1 bosc pear , peeled , cored and thinly sliced ( or other firm pear )
1 tablespoon fresh thyme , chopped
1 package camembert cheese
1/2 cup chutney , I use Red Onion Cranberry Apricot Confit
3 sheets phyllo pastry sheets

Instructions

1.Preheat the oven to 375°F.
2.In a skillet, heat the olive oil over medium heat and add the sliced pear and thyme. Cook until the pear starts to caramelize, approximately 5 minutes.
3.Unwrap the camembert and place it in the center of the phyllo pastry sheets. Spoon the chutney over the cheese and wrap the phyllo pastry around the cheese, tucking the pasty sheets tightly around the cheese to ensure it's fully wrapped.
4.Bake the cheese for 20 minutes or until the pastry is golden brown and the cheese is melted. Let cool for a few minutes. Then top with the caramelized pears.
