Ingredients

1/2 lb feta cheese , crumbled into fine pieces ( about 4 cups )
6 ounces whole milk ricotta cheese ( about 1 1/2 cups )
2 large eggs , lightly beaten
1/2 bunch scallion , sliced thin
1/8 - 1/4 cup minced fresh dill leaves
1 tablespoon lemon , juice of
1 medium garlic clove , minced or pressed through a garlic press
1/2 teaspoon freshly grated nutmeg
1/3 teaspoon salt
1 pinch ground black pepper
1 1/2 frozen spinach , 10 oz packages thawed and squeezed dry
3/4 cup olive oil or 3/4 cup clarified butter
1 lb phyllo dough , thawed
Phyllo Triangles are a popular dish in Middle Eastern and Mediterranean cuisine. They are simple to prepare yet elegant and can be filled with anything from cheese and spinach to meat and vegetables. The combination of spinach, feta and ricotta layered between crispy sheets of phyllo dough makes for a delightful snack or appetizer. The delicate phyllo pastry contrasts well with the creamy and flavorful cheese filling. Serve them with a cup of tea or alongside a salad, and they are sure to impress your guests.

Instructions

1.Take a bowl and add feta cheese, ricotta, eggs, scallions, dill, lemon juice, garlic, nutmeg, salt and pepper in it. Mix well.
2.Now add the remaining ingredients in it, except for the phyllo dough.
3.Preheat the oven to 400°F. Unroll the phyllo dough, and keep it covered with a lightly damp kitchen towel to avoid drying it out.
4.Take one sheet and brush with olive oil or clarified butter.
5.Put another sheet on the top of the first one and repeat the process of brushing. Repeat this process until you have 5 to 6 sheets stacked on top of each other.
6.Cut the stacked phyllo sheets into 6 strips, each around 3 inches wide.
7.Place one teaspoon of the cheese and spinach mixture at the bottom left corner of each strip. Fold the left corner up to form a triangle, then continue to fold up the strip into triangles. Repeat this process with the remaining triangles.
8.Bake for 10-15 minutes or until golden and crispy.

PROS

These phyllo triangles are an excellent source of protein and promise a crispy and creamy filling.
They are a great addition to any party menu and make for perfect finger food.

CONS

While they may be delicious, they are high in calories due to the use of cheese and phyllo dough.
