Ingredients

5 cups vegetable stock
3 cups beef stock
2 tablespoons cornstarch
4 small cooking onions , very finely diced
1 small carrot , julienned ( max 1 inch long )
2 stalks celery , very finely diced
6 garlic cloves , very finely diced
1 piece fresh ginger , very finely diced ( about 1 1/2 inch cubed )
1 stalk lemongrass
1 1/2 cups reduced sodium soy sauce
1/2 cup oyster sauce
1/4 cup fish sauce
1/4 cup lime juice ( or lemon )
1 tablespoon crushed red pepper flakes
1 tablespoon basil
1/2 cup palm sugar ( or brown sugar )
1/2 kg lean beef
1 red pepper , julienned ( max 1 inch long )
1 yellow pepper , julienned ( max 1 inch long )
1 orange bell pepper , julienned ( max 1 inch long )
1 green pepper , julienned ( max 1 inch long )
1 bunch green onion , sliced very thin
1 dash sesame oil

Instructions

1.In a large bowl, whisk together vegetable stock, beef stock, and cornstarch. Set aside.
2.In a large pot or dutch oven, heat some oil over medium heat. Add finely diced cooking onions, julienned carrots, finely diced celery, and finely diced garlic. Stir-fry until the onions become translucent, for about three minutes.
3.Add finely diced fresh ginger and sliced lemongrass (cut into 3-inch lengths and bruise with a knife). Stir-fry for another minute.
4.Pour in the reserved broth mixture. Bring it to a boil and then simmer for 10-15 minutes.
5.In a separate small bowl, mix together soy sauce, oyster sauce, fish sauce, lime juice, crushed red pepper flakes, basil, and palm sugar. Set this sauce aside.
6.Once simmered, add the sliced beef and julienned peppers. Cook until the beef is tender, for about 5-7 minutes.
7.Remove from heat and discard lemongrass. Stir in the sauce mixture. Add some sesame oil to enhance the flavor. Adjust seasoning if necessary and let it sit for at least 20 minutes before serving.
