Ingredients

4 quarts water
1 bunch green onion , dark green cut off for soup , white and light green thinly sliced for garnish
2 pieces fresh ginger , 2 inches each , left whole and crushed
1 tablespoon sea salt ( to taste )
3 lbs chicken breast halves , bone & skin on
3 1/2 lbs chicken wings , backs , and necks
2 tablespoons light brown sugar
1 package rice vermicelli , soaked in hot water for 30 minutes and drained
1 bunch fresh cilantro , chopped
1 bunch fresh Thai basil
3 cups fresh mung bean sprouts
1 lime , cut into 6 wedges
1 jalapeno , stemmed and thinly sliced ( remove seeds first , if you like )
2 tablespoons fish sauce
chili-garlic sauce , such as sriracha ( for serving )
Pho Ga, or Chicken Noodle Soup, is a popular Vietnamese dish that is enjoyed all over the world. Instructions

1.Bring 4 quarts of water to a boil in a large pot.
2.Add the green onions, ginger, and sea salt to the pot and let simmer for 30 minutes.
3.Add the chicken breast, wings, backs, and necks to the pot and continue to simmer for another hour, or until the chicken is fully cooked.
4.Remove the chicken from the pot and set it aside to cool.
5.Strain the soup through a fine-mesh sieve, discarding the solids. Return the broth to the pot and stir in the brown sugar.
6.While the soup is cooking, cook the rice vermicelli according to the package instructions.
7.Shred the chicken into bite-sized pieces and set it aside.
8.To serve, divide the cooked vermicelli among bowls and top with the shredded chicken, cilantro, Thai basil, bean sprouts, lime wedges, and sliced jalapeno.
9.Ladle the hot broth over the top of each bowl.
10.Serve with fish sauce and chili-garlic sauce on the side.
