2 lbs boneless beef chuck roast

1/2 cup white onion , chopped

4 ounces pate

17 ounces puff pastry , thawed
2 tablespoons butter , softened
salt , to taste
ground black pepper , to taste
2 teaspoons garlic powder
1 tablespoon prepared yellow mustard
14 ounces low sodium beef broth
1/2 tablespoon cooking sherry
2 ounces Lipton beefy onion soup mix , 1 envelope
1 egg yolk , beaten

Instructions

1.Preheat oven to 400°F.
2.Season the beef chuck roast with salt, black pepper, garlic powder, and mustard.
3.Heat a skillet over medium-high heat and add 2 tablespoons of butter. Once hot, add in the beef and cook for 4-5 minutes on each side until browned. Remove from heat and set aside to cool.
4.In the same pan, add the chopped onions, minced garlic, and chopped mushrooms. Cook for 2-3 minutes or until the onions are soft and the mushrooms have browned.
5.In a mixing bowl, combine softened butter, mayonnaise, A.1. Original Sauce, and pate, then mix until smooth.
6.Place a puff pastry sheet on a baking sheet, then spread the pate mixture evenly on top. Place the beef on top of the pate mixture, then top the beef with the onion and mushroom mixture.
7.Cover the beef with the second sheet of puff pastry and press the two sheets together to seal the edges. Cut slits on top of the pastry to allow steam to escape while baking.
8.Mix the beef broth, cooking sherry, beefy onion soup mix, and 1 tablespoon A.1. Original Sauce in a small mixing bowl, then pour the mixture over the top of the puff pastry. Brush the pastry with beaten egg yolk, then bake for 10-12 minutes until golden brown.
