Ingredients

1 -2 pheasant
10 slices fatty bacon , rinds removed
2 tablespoons butter
2 tablespoons vegetable oil
1 cup dry white wine
12 peppercorns
2 bay leaves
750 g sauerkraut , rinsed and drained
1 cup beer
250 g kransky sausage or 250 g cabana sausage

Instructions

1.Preheat oven to 350°F.
2.Clean the pheasant, then season it with salt and pepper.

4.Remove bacon from Dutch oven and set aside, leaving the fat in the pan.
5.Brown the pheasant on all sides in the bacon fat, then remove from the pan and set aside.

7.Add in white wine, peppercorns, bay leaves, and beer.
8.Place pheasant back in the Dutch oven, cover the pan, and bake for 1 hour.
9.Add in sliced sausage and reserved bacon, then return the pan to the oven and bake for another 30 minutes uncovered.
10.Remove from oven and let rest for 5-10 minutes before serving.
