Instructions

1.Preheat the oven to 350°F (180°C).
2.Place the olives, olive oil, goat cheese, and 1 tablespoon chopped rosemary in a blender or food processor and blend until smooth and creamy.
3.On a lightly floured surface, roll out the phyllo dough to about 1/8 inch (3mm) thickness. Use a 3-inch (7.5cm) fluted cookie cutter to cut out circles from the dough.
4.Place the circles in ungreased miniature muffin cups, pressing gently to conform to the shape of the cups.
5.Spoon about 2 teaspoons of the olive mixture into each cup.
6.Brush the edges of each dough circle with beaten egg.
7.Place 1 small rosemary sprig on top of each cup, pressing lightly to adhere.
8.Bake for 20-25 minutes, or until the tarts are golden brown and crispy.
9.Garnish with chopped olives, if desired, and serve warm or at room temperature.
