Ingredients

4 -5 round courgettes
4 -5 large beefsteak tomatoes
4 tablespoons olive oil
2 red onions , peeled and finely chopped
2 -4 garlic cloves , peeled & crushed
450 g good quality sausage meat
50 g tomato puree
4 tablespoons white wine
2 tablespoons flat leaf parsley , chopped finely
50 g parmesan cheese , grated
100 g fresh breadcrumbs
salt
fresh ground black pepper
parsley ( to garnish ) or basil leaves ( to garnish )
Petits Farcis is a popular Provençal dish that is typically served as a main course. This flavorful dish is made by stuffing round courgettes and large beefsteak tomatoes with sausage meat, breadcrumbs, and Parmesan cheese, then baking them in the oven until golden and crispy. Instructions

1.Preheat oven to 350°F (175°C).
2.Cut off the tops of each courgette, slice off the bottom just enough to make it level and stand it on end.
3.Slice off the tops of the tomatoes and scoop out the flesh with a spoon.
4.Heat the oil in a frying pan and fry the onions and garlic for about 5 minutes until softened.
5.Add the sausage meat and fry until browned, breaking it up with a fork as it cooks.
6.Add the tomato purée, white wine, chopped parsley, salt, black pepper, and breadcrumbs to the pan, mix well.
7.Stuff the courgettes and tomatoes with the mixture.
8.Transfer to a large baking dish, sprinkle the parmesan cheese over the top and bake for 40-50 minutes.
9.Serve hot with parsley or basil leaves for garnish.
