3 garlic cloves , minced
1/2 cup cold water
1 teaspoon vegetarian bouillon powder
1 teaspoon cornstarch
1/3 cup soy sauce
2 tablespoons ketchup
1 tablespoon vinegar
1 tablespoon szechuan hot bean sauce
1 teaspoon sugar
1/4 cup dry roasted peanuts , chopped
2/3 cup zucchini , chopped
1 package frozen chopped spinach , thawed and squeezed dry

Instructions

1.Cook spaghetti according to package instructions, drain and set aside.
2.In a small mixing bowl, combine cold water, bouillon powder, and cornstarch. Mix until the cornstarch is dissolved.
3.In another mixing bowl, combine soy sauce, ketchup, vinegar, szechuan hot bean sauce, and sugar. Mix until sugar is dissolved and set aside.
4.In a wok or large frying pan, heat 2 tablespoons of oil over medium-high heat and stir fry garlic for 15 seconds, or until fragrant. Do not let it brown.
5.Add chopped zucchini and stir fry for 2 minutes.
6.Add frozen chopped spinach and stir fry for another 2 minutes.
7.Pour the soy sauce mixture into the wok and stir until it boils.
8.Add noodles and toss around in the sauce for a few minutes until heated through and coated with sauce.
9.Sprinkle with chopped roasted peanuts before serving.
