1 cup cherry tomatoes, halved | |
2 tbsp olive oil | |
Salt and pepper | |
1/3 cup pesto | |
1/4 cup grated Parmesan cheese | |
1/4 cup pine nuts |
1. | Preheat the oven to 400°F. |
2. | Toss the cherry tomatoes with 1 tablespoon olive oil, salt and pepper on a baking sheet. Roast for 20-25 minutes. |
3. | Cook the pasta according to package instructions. |
4. | Drain the pasta and toss with the remaining olive oil, pesto, and Parmesan cheese. |
5. | Serve the pasta topped with the roasted cherry tomatoes and pine nuts. |
