Ingredients

1 lb. penne pasta
3 zucchinis, sliced
3 red bell peppers, sliced
1/4 cup olive oil
1/2 tsp. salt
1/4 tsp. black pepper
1 cup basil leaves
1/2 cup grated parmesan cheese
1/4 cup pine nuts
2 garlic cloves
1/2 cup olive oil
Salt and pepper to taste
This pesto pasta with grilled vegetables is a delicious and healthy meal that is perfect for a quick dinner or served as a side dish at a summer barbecue. The grilled vegetables add a smoky flavor to the dish while the pesto sauce made with fresh basil, parmesan cheese, and pine nuts gives the pasta a burst of flavor.

Instructions

1.Preheat grill to medium-high heat.
2.Cook pasta according to package directions.
3.While pasta is cooking, toss sliced zucchinis and red bell peppers with olive oil, salt, and pepper in a bowl.
4.Grill vegetables for 3-5 minutes on each side or until lightly charred and tender.
5.In a food processor, combine basil leaves, parmesan cheese, pine nuts, and garlic cloves and pulse until finely chopped.
6.Gradually pour in olive oil while pulsing until mixture becomes a smooth paste.
7.Drain pasta and toss with pesto sauce.
8.Serve pasta with grilled vegetables on top.
