Ingredients

1 lb spinach pasta ( you can really use any of your favorite pastas , but the spinach is best for this )
2 cans Italian tomatoes
1 small onion , diced ( optional )
1 teaspoon garlic , minced
1/3 cup white wine
2 tablespoons fresh basil , chopped fine
1 teaspoon olive oil
salt
pepper
4 -6 boneless skinless chicken breasts ( slightly pounded )
8 ounces pesto sauce ( a good quality store bought pesto is fine , or home made if you want )
2 cups Italian breadcrumbs
1 cup parmesan cheese , grated
olive oil
parmesan cheese ( optional )
This dish is a modern take on a classic Italian meal. The chicken breasts are coated in a flavorful pesto and breadcrumbs mixture that crisps up in the oven. Instructions

1.Cook pasta according to package instructions. Reserve a cup of the cooking water before draining.

3.Pour in canned Italian tomatoes, white wine, and fresh basil. Simmer for ten minutes until the sauce has thickened.
4.Toss cooked pasta together with the spinach and tomato sauce. Add some of the reserved cooking water to thin out the sauce if needed.
5.Preheat the oven to 375°F. Coat chicken breasts in pesto sauce and place them in an oven-proof baking dish.
6.Combine breadcrumbs and parmesan cheese together in a separate bowl. Cover the chicken breasts with the breadcrumb mixture.
7.Drizzle a bit of olive oil over the chicken breasts. Bake them for 25-30 minutes until the chicken has reached an internal temperature of 165°F.
8.Serve the chicken breasts over the tomato spinach pasta. Top with more grated parmesan cheese if desired.
