4 boneless chicken breasts | |
1/2 cup basil pesto | |
1/2 cup chopped tomatoes | |
1/2 cup shredded mozzarella cheese | |
Salt and pepper to taste |
1. | Preheat oven to 375°F (190°C). |
2. | Place chicken breasts in a baking dish and season with salt and pepper. |
3. | Spread pesto over each chicken breast. |
4. | Top chicken with chopped tomatoes. |
5. | Bake in preheated oven for 25 minutes. |
6. | Remove from oven and sprinkle shredded mozzarella cheese on top of each chicken breast. |
7. | Turn oven to broil. |
8. | Place chicken under broil for 5 minutes or until cheese is melted and bubbly. |
9. | Remove from oven and let chicken rest for 5 minutes before serving. |
