Ingredients

1 1/2 lbs rhubarb
3 cups water
2 tablespoons olive oil
1 1/2 lbs ripe tomatoes , peeled , seeded and chopped ( or 3 cups chopped , seeded canned plum tomatoes )
1 cup dry red wine
1 -2 tablespoon honey
1 lemon , juice and zest of
salt & freshly ground black pepper
1 pinch ground cinnamon ( optional )
2 lbs firm fish fillets , such as cod , sea bass , flounder , salmon

Instructions

1.Preheat oven to 350°F.
2.Cut rhubarb into 1-inch pieces and place in a pan with 3 cups of water.
3.Simmer until the rhubarb is soft, about 20 minutes.
4.Strain the rhubarb and return the liquid to the pan.
5.Add olive oil, tomatoes, red wine, honey, lemon juice and zest, salt, black pepper, and cinnamon to the pan.
6.Bring to a boil and then reduce heat, simmering for about 20 minutes until the sauce has thickened.
7.Season the fish fillets with salt and black pepper and place them in a baking dish.
8.Cover the fish with the rhubarb sauce.
9.Bake in the oven for approximately 15-20 minutes or until fish is cooked through.
