Pesche, which means 'peaches' in Italian, are a popular cookie in many regions of Italy. These cookies are made to look like miniature peaches and are often served at special occasions such as weddings and baptisms. The cookie is made from a sweet, buttery dough that is flavored with almond extract and lemon juice. The cookies are then coated in a mixture of sugar and almond extract before being baked in the oven until golden brown. The final result is a delicious and whimsical dessert that is sure to impress your family and friends.

Instructions

.Preheat the oven to 350°F (180°C).
.In a large mixing bowl, cream together the butter and sugar until light and fluffy.
.Add in the eggs and lemon juice, and mix until well combined.
.In another bowl, mix together the flour and baking powder.
.Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
.Add in the almond extract and mix until combined.
.Divide the dough into four equal portions and place each portion in a separate bowl.
.In one bowl, add a few drops of yellow food coloring. In another bowl, add a few drops of red food coloring. Mix each until the desired peach color is achieved.
.Pinch off a golf ball-sized piece of dough and roll into a ball. Flatten the ball slightly, then form it into a teardrop shape with one end slightly narrower than the other.
.Cut a horizontal slit in the flattened end of the dough to form the peach's 'mouth'.
.Dip each cookie into the almond extract and water mixture, one at a time, then roll them lightly in the white sugar. Place each cookie on a lined baking sheet.
.Bake the cookies for 15-20 minutes or until lightly golden brown.
.Remove from oven and let cool before serving.
