Ingredients

1 lb white fish fillet ( hake , turbot or similar )
16 -24 clams
1 yellow onion
1 cup parsley , chopped up ( dried or fresh )
1 cup white wine ( chardonnay is my favorite )
1/4 cup garlic , chopped up
1 tablespoon flour
olive oil ( xtra virgin will make the difference )
1/2 cup peas ( optional )
1 cup potato , cut into cubes ( optional )
Pescado en salsa verde, or fish with clams in green sauce, is a popular seafood dish in Spain and Latin America. It is a traditional Basque dish that is often served as a main course for lunch or dinner. The green sauce is made from fresh herbs and white wine, which helps to enhance the flavor of the fish and clams. Instructions

1.Begin by cleaning the clams. Soak them in cold water for an hour and drain. Repeat the process a couple of times to get rid of all the sand.
2.In a cooking pot, add the chopped onion in oil and sauté until golden brown.
3.Add the flour to the pot, stir and wait for a minute.
4.Add the garlic, parsley, and white wine to the pot and cook for 2 minutes.
5.Add the cubed potatoes and peas and cook for 5 minutes. Add water or chicken broth to the mixture until it is covered by 1 cm.
6.Cook for 15 minutes with a low flame until the potatoes are softening. Season with salt and pepper.
7.Add the fish fillet to the pot and cook for 10-12 minutes until the fish is cooked through.
8.Add the clams, cover the pot, and cook for another 5-6 minutes until the clams are open. Discard any that remain closed.
9.Serve in a deep bowl with the sauce on top of the fish.
