1 1/2 red bell peppers , cut into 3/4 inch chunks
1 tablespoon chili paste ( aji amarillo )
1/2 lemon , juice of
1/2 cup roughly chopped flat leaf parsley

Instructions

1.In a large pot, bring chicken broth and chicken to a boil over medium-high heat.

3.Remove chicken from the pot, shred it with a fork or cut it into small pieces and set aside.
4.Add diced potatoes, corn, bell peppers, and chili paste to the pot.
5.Simmer for 15-20 minutes, or until the vegetables are tender.
6.Stir in lemon juice and chopped parsley, then add the chicken back to the pot and cook for an additional 5-10 minutes, until heated through.
