2 1/4 lbs white potatoes

1 teaspoon paprika
6 seeded black olives , cut in 4
1/2 cup tomatoes , diced , peeled and seeded
1 teaspoon minced parsley
1 teaspoon minced cilantro
1/4 cup raisins

Instructions

4.Add onions, garlic, and paprika, and cook until onions are translucent.
5.Add diced tomatoes, black olives, raisins, parsley, and cilantro to the pan, and cook for a few more minutes.
6.Take a fistful of mashed potato and egg mixture, form it like a ball, and then flatten it in your palms.
7.Place a spoonful of beef mixture in the center and close the mashed potatoes around it, forming a ball.
8.Repeat until all mashed potatoes and beef mixture are used.
9.Beat the remaining egg into a bowl and dip each potato ball into it.
10.Heat up the remaining oil in a deep pan and fry the potato balls until golden brown.
11.Serve hot and crispy with your favorite dipping sauce.
