Ingredients

2 cups dried black beans , 1 pound , picked over , soaked in water overnight and rinsed well
2 large sweet onions , cut into 1/4 inch thick rounds
2/3 cup red wine vinegar
3 tablespoons vegetable oil
1/2 teaspoon ground annatto seed ( available at Hispanic markets and specialty stores )
1/2 lb cooked ham , cut into 1/4 inch dice ( about 1 cup )
3 garlic cloves , minced
1 1/2 teaspoons ground cumin
2 tablespoons canned chipotle chiles , diced
2 hard-boiled eggs , chopped coarse
1/2 cup pitted black olives , chopped coarse
fresh coriander leaves , chopped , if desired
thinly sliced green onion , if desired

Instructions

2.While the beans are cooking, heat the vegetable oil in a separate skillet over medium-high heat. Add the onions and cook, stirring occasionally, until golden brown and caramelized, about 20-25 minutes.
3.Add the garlic, cumin, and annatto seed to the skillet with the onions and continue cooking for another 2-3 minutes.
4.Drain the cooked black beans and add them to the skillet with the onions, along with the red wine vinegar and chipotle chiles. Cook, stirring occasionally, until the mixture has thickened slightly and the flavors have combined, about 10-15 minutes.
5.Remove from heat and stir in the diced ham, olives, hard-boiled eggs, and chopped coriander leaves (if using).
6.Serve hot or cold, garnished with thinly sliced green onions (if desired).
