Ingredients

Peruvian lamb or goat stew is a traditional slow-cooked dish that is packed with flavor. Instructions

1.In a blender or food processor, puree garlic, annatto seed, coarse grain mustard, salt, pepper, cumin, and Mexican pilsner beer.
2.Cut lamb chops and rib into bite-sized pieces.
3.In a large pot or Dutch oven, heat oil over medium-high heat.
4.Add lamb to the pot, and cook for about 3 minutes, stirring frequently.
5.Add the blended mixture to the pot, and stir well to coat the lamb.
6.Add chopped tomatoes, sliced onions, chicken broth, and cilantro.
7.Bring the mixture to a boil, then reduce heat to low and let simmer for 2-3 hours, or until the lamb is tender.
8.Add yucca root, and let simmer for another 20-25 minutes, or until yucca is tender.
9.Garnish with cilantro and parsley, and serve hot.
