Ingredients

1 tablespoon vegetable oil
1 medium onion , chopped
1 serrano peppers or 1 jalapeno chile , seeded and finely chopped
2 clove ( s ) garlic , crushed with press
1 teaspoon ground cumin
clam juice
1 can diced tomatoes , drained and juice discarded
2 cups water
1 lb red potatoes , cut into 1-inch chunks
salt
2 limes
1 1/2 lbs cod fish fillets , cut into 1-inch chunks
1/2 lb medium scallops , each cut horizontally in half
1/2 lb cleaned squid , bodies sliced crosswise into 1/4-inch-wide rings and tentacles cut into pieces if large
1/4 cup loosely packed fresh cilantro leaves , chopped
Peruvian Fish Soup or 'Sopa de Pescado' is the traditional fish soup of Peru that originates from the coastal regions of the country, where seafood is abundant. It is a flavorful soup that represents the flavors of both the ocean and the Andean region of Peru, where the dish is famous. Typically, Peruvian Fish Soup consists of a pureed vegetable-based broth with fish, shrimp, shellfish, and vegetables such as potatoes and corn. It is then seasoned with a range of herbs and spices such as cumin, garlic, and fresh cilantro.

Instructions

1.In a large pot, heat the vegetable oil over medium heat. Add the onion and serrano peppers or jalapeno chile and cook for 5 minutes or until softened.
2.Add the garlic and ground cumin and sauté for 1 minute.
3.Add enough clam juice to fill the pot up to 3 cups. Add the diced tomatoes, 2 cups of water, cubed potatoes, and some salt, to taste. Squeeze in the juice of the limes.
4.Bring the soup to a boil. Reduce heat, and simmer until the potatoes are tender, for about 20 minutes.
5.Add the fish chunks and cook for another 5 minutes until the fish is opaque. Add the scallops and squid and cook for another 3 minutes until opaque. Remove the pot from the heat and stir in the cilantro leaves.
6.Serve the soup hot in bowls.
