Ingredients

4 garlic cloves , peeled
1 tablespoon cumin seed ( or ground cumin )
3 tablespoons hot Hungarian paprika ( or 1/4 cup aji panca paste , preferred , or 2 canned chipotle peppers plus 1 tablespoon of the liquid )
2 tablespoons red wine vinegar
2 tablespoons annatto oil
coarse salt
pepper
1 1/2 lbs beef heart , cut into strips 3-inchx1 1/2-inchx1/4-inch
2 tablespoons annatto oil , for basting

Instructions

3.Preheat the grill to high heat.
