Ingredients

2 teaspoons olive oil
1 medium leek , white and pale green parts halved and sliced
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 1/2 cups quinoa , rinsed and drained
2 garlic cloves , minced
2 large eggs
1 cup milk ( Jim suggests that you increase this to 2 cups of milk or it may be too dry )
1 1/2 cups grated cheddar cheese , . jim used 50 50 sharp cheddar & pecorino romano plus more for the top see instructions
1 teaspoon instant chicken bouillon granules ( Jim 's substitution or use salt to taste )
1 tablespoon sesame seeds ( Jim 's addition )

Instructions

1.Preheat oven to 350 degrees F.
2.In a large skillet, heat olive oil over medium heat. Add leek, red and green bell peppers and cook for 5 minutes or until tender.
3.Stir in quinoa and garlic and cook for 3 minutes, stirring frequently. Remove from heat.
4.In a large bowl, whisk together eggs, milk and instant chicken bouillon granules.
5.Add cooked quinoa and cheese to the bowl and stir to combine.
6.Pour mixture into a greased 9x13 inch baking dish and spread evenly. Sprinkle extra grated cheese on top.
7.Bake for 30-40 minutes or until top is golden brown and quinoa is tender.
