Ingredients

2 lbs fresh baby spinach leaves
1/4 cup water
2 tablespoons oil
2 medium onions , sliced thin
1/2 teaspoon salt ( to taste )
1/8 teaspoon ground turmeric
1/8 teaspoon pepper
6 eggs
Persian spinach and egg fry, locally known as Boranee, is a traditional Persian dish that's a staple in many households. Instructions

1.Rinse spinach leaves and roughly chop them.
2.In a large pot, add the spinach and 1/4 cup of water and cook until the spinach wilts, approximately 5-7 minutes.
3.Drain the spinach in a colander and set it aside.
4.In a large frying pan or wok, heat 2 tablespoons of oil over medium heat.
5.Add sliced onions and cook for around 10 minutes, or until they're golden brown.
6.Add turmeric, pepper, and salt to the pan and stir well.
7.Add spinach to the pan, mix well and continue to cook for another 10-15 minutes.
8.Make six wells in the spinach and crack an egg in each.
9.Cover the pan, and cook for around 5 to 7 minutes, or until the egg whites are set and the yolks are still slightly runny.
10.Serve hot with toast or bread.
