Ingredients

6 cups water
4 cups uncooked long-grain white rice
3 tablespoons vegetable oil
1/2 cup water
1 bunch fresh dill , chopped
1 bunch fresh parsley , chopped
1 bunch fresh cilantro , chopped

ground turmeric to taste
ground cinnamon to taste
1 teaspoon salt

Persian Sabzi Polo is a popular rice dish in Iran, often served at special occasions like weddings and Nowruz (Persian New Year). Instructions

1.Rinse the rice several times until the water runs clear and soak it in 6 cups of water with 1 teaspoon of salt for at least 2 hours.
2.In a large pot, bring 12 cups of water to a boil and add the rice with its soaking water. Cook until the rice is parboiled but still slightly firm, about 10 to 12 minutes, then drain in a colander.
3.In a medium pan, sauté the fava beans in 3 tablespoons of vegetable oil until they are slightly browned. Set aside.
4.In a large pan, pour 1/2 cup of water and 1 tablespoon of vegetable oil and add a layer of parboiled rice. Add a layer of chopped herbs and fava beans on top of the rice, and sprinkle with turmeric, cinnamon, salt, and pepper. Repeat the layers until all the ingredients are used up.
5.Place the pan over medium heat, cover with a lid and cook for 10 minutes. Then reduce the heat to very low, place a clean dish towel over the lid and cook for another 60 minutes. Serve hot and enjoy!
